Veggie Quesadilla Recipe

I try to make at least one vegetarian recipe a week and these veggie quesadillas were on the menu last week. I chose them because they are obviously vegetarian, but also because they are healthy and easy. All wins in my book. These ended up tasting even better than I thought they would!

These are insanely easy to make and I found a recipe on Pinterest that I used as a guide but of course I changed it up a bit because I never follow the recipes. I tend to change things around to make things shit my needs better. Based on the amount of ingredients I used, this makes 8 quesadillas.

The recipe and ingredient I used are all listed below. This can also easily become a vegan recipe. Leave out the butter, sour cream, and the cheese. They aren’t crucial parts.

Baked sweet potatoes are needed and I found a way to make them quickly! Simply take the sweet potato, cover it in oil, salt, and pepper. Wrap it in a paper towel and microwave for 8 minutes. It’s going to be really hot when it’s done so let it cool down before pulling the skin off. It’s so much easier than peeling them!

All in all the recipe took me maybe 30-45 minutes to pull together. The veggie minute is fast to make and only needs to cook long enough to heat it up.

I cut mine in half and dipped it in sour cream and salsa. One was more than enough for me because they were really filling!
