I’m trying to eat better and exercise again, (how many times have I said that before?) so my boyfriend and I have been trying out new salads to find some that are both tasty and filling. I figured I could share some of the better ones on here for you guys to try if you want.
This one is a lemon herb Mediterranean chicken salad and of course I didn’t exactly follow the recipe. I found it on Instagram and switched out a couple of ingredients to make my life easier.
First thing, making the dressing. I started with this because you use a bit of this to marinate the chicken. While the chicken marinated I prepped the rest of the ingredients.
The chicken only has to marinate for about 30 minutes in the fridge.
The dressing:
Mix together the following;
2 tablespoons olive oil
1/4 cup lemon juice
2 tablespoons water
2 tablespoons balsamic vinegar
2 teaspoons dried basil
2 teaspoons dried oregano
2-3 garlic cloves, minced
pinch of salt and pepper
Mix that all up and pour a little bit over some cut up chicken breasts.
Prep the rest of the salad while the chicken sits.
Chop your romaine lettuce, an avocado, cucumber, and cherry tomatoes. The quantity is completely up to you. I used a whole avocado when we had it for dinner. I also split up the rest of the ingredients to make five more salads for my lunch. I’ll have to make more dressing to go with them though.
The original recipe called for more ingredients so you can also add red onions and black olives but I skipped those.
This salad will be perfect for the summer time but for now, I’ll enjoy it for the rest of the week!
