As I was looking for nice, easy, non-cook recipes during our heat wave, I came across this one and it’s all I could think about for days. The thought of fresh, crunchy veggies and a nice peanut sauce got me all like mmmm…
Let me tell you though, I knew it was going to be tricky. I read and reread the directions that I found on http://www.yummly.com that stated that the rice paper is difficult to roll and would require some practice. So if you’re thinking of attempting this recipe, make sure you have some time on your hands.
I will attach the pictures of what the recipe called for, but I just used the veggies I already had on hand.

It turns out I needed more. My rolls came out too thin but still tasted pretty good!
Here is what you need for the sauce:
Just add all the ingredients in a bowl and whisk together. Easy enough right? I’m not sure what I did wrong but my sauce came out too dark and my fiancé said it had too much soya sauce…so maybe I read that wrong or something…
For the rice paper I used this kind and it had very good directions on the back on how to dip the paper in water and properly roll it.
I found it at our local grocery store! Make sure to roll the paper nice and tight around your veggies…it took me a good 3 times before it was tight enough.
I won’t attach any directions as it is pretty straight forward! Wet the paper in warm water for 10 seconds, add your veggies, roll nice and tight, dip! Here is my finished product:
I know, I know my peanut sauce looks like chocolate, and even though it gave me pretty bad hard burn, I think it tasted good! The roll was everything I had hoped it would be…fresh and crunchy! Like I mentioned above I would definitely make sure to have more veggies on hand to add to the roll but it would also make a great summer snack! I really enjoyed the rice paper that was around the veggies, it was thin and light. It also made me feel like I was eating super healthy…in like every bite.
I’ll for sure be attempting this recipe again in the nearer future but I’m not sure I’ll be able to convince my household to try it again after this time…oh well, a nice lunch for me!
