Banana Oatmeal Chocolate Chip Muffin Review

I’m the worst when it comes to following recipes.. I’ll look at one or two, read through them and then just go for it. I always swap things and change measurements too. I’m always so happy when something turns out and these muffins were a success!

Found so many recipes online that were all basically the same thing so I got an idea of what to do and then went at it. The stuff I used was all things I usually have on hand at home. I only used 8 ingredients and it was all basic stuff.

2 ripe bananas I had frozen (not pictured above)

1 cup of milk (you can swap this out with almond milk if you prefer)

1 egg

1 tsp. vanilla extract

2 cups of oats (I used large whole grain flakes)

½ tsp. salt

1 tsp. baking powder

1 cup chocolate chips

These were so easy to make too. Preheat oven to 375 F, while it is heating up you peel and mash the 2 bananas. Mix in the milk, egg, and vanilla. Then you add your oats, baking powder, and salt. Once that is all mixed add the chocolate chips. I used one cup but you can add more, less, or leave them out if you want them to be even healthier but these are healthy enough for me lol.

I put mine in reusable silicone cupcake holders but you can just grease your pan instead. These cooked in 15 minutes in a dark muffin pan. If yours is a lighter one then cook for about 20 minutes. Once they cool put them in the fridge, they will continue to harder in the fridge.

I use these as my healthy morning snack at work. They are quick, easy, and healthy to boot! I definitely plan on making these again and I’m determined to start eating healthier so I’ll make sure to share more recipes here.. if they actually taste good!
